The key to making tomato recipes stand out in the crowd is by paying attention to detail. For this salad, select only your best tomatoes and use fresh, moist mozzarella. Globe tomatoes are a good choice because their texture is never mealy or watery. Romas are another tasty option – and they are easy to grow.
Allow the dish to chill for 10 minutes before serving. This lets the flavors begin to blend but keeps the cheese from getting soggy and crumbling. Don’t add salt until you have tasted the salad without it first. Some mozzarella varieties contain enough salt to provide the correct balance already.
Present this lovely salad in a white ceramic bowl to provide just the right contrast. This flavorful appetizer goes well with Greek or Italian cuisine. For a summer brunch, pair this dish with whole wheat crackers and orange slices.
Wash and remove the seeds from 6 large Roma or 3 Beefsteak tomatoes. Cut the tomatoes into 1/2” pieces and set aside.
Finely mince 1/4 cup sweet red or yellow onion
Cube 12-14 oz of fresh mozzarella (about 1 and 1/2 cups). These cubes should be slightly smaller than the tomato pieces.
Place all ingredients in the serving dish
Add 1 Tbsp Balsamic vinegar (red works fine, but use white if you can find it)
Add 1 tsp fresh cilantro, parsley, or basil from your herb garden.
Add freshly ground black pepper to taste
Gently toss all ingredients together and chill before serving
Serves 6 – 8
- Incorporate a splash of fresh orange juice or olive oil
- Use the whites of 6 boiled eggs instead of mozzarella cheese
- For extra vitamin K and iron, serve this salad over fresh baby spinach
- Add halved black olives for a Mediterranean taste.
